Besan Ladoo
Ingredients
1 cup(255 ml) Besan / Gram flour
1 cup powdered Sugar
10-15 Cashews
½ cup Ghee
½ tsp Cardamom(Elaichi) powder
Method of Preparation
- First fry the Besan in a bowl (microwave proof) in microwave. On every minute you need to take it out from the microwave and mix it up with a spoon to avoid the burning of the flour. Regular mixing of flour is the essential part of preparation. The frying has to be done for 10-12 minutes or till the flour is uncooked.
- Now, the fried Besan has to be transferred to a separate bowl immediately to avoid burning of the flour from the heat of the container. Allow the flour to cool down to some extent or fully. Add sugar and elaichi powder in the flour and mix it.
- Melt ghee and add to the mixture. The quantity of the ghee can be more or less , its just enough to form a ladoo.
- Now, fry Cashews till golden brown color and keep aside.
- Bind and form equal and even sized ladoos, ganish on top of ladoos with the roasted cashews. Now the yummy Ladoos are ready.
Kaju Katli Homemade Sweets
Ingredients
- 1 cup Cashews
- 1 and 1/2 tbsp Milk powder
- 1 cup powdered Sugar
- 3 and 1/2 tbsp Butter
- few drops Rose essence
- Silver Foil / Chaandi varq (For garnishing )
Method of Preparation
- First, grind the cashew nuts with little water in a mixer grinder to make paste.
- Now, add rest of ingredients to the paste, blended well then transfer to a bowl (microproof).
- Put the bowl in microwave for 7 minutes but stir once in between(to avoid burning).
- Remove the bowl from microwave, beat the mixture well with spoon(cup-shaped).
- Once the mixture looks hard like chapathi dough, shift it to a greased aluminium foil.
- Put another foil on the top of dough and roll it over, making 1/4 inch thickness bread.
- Now, cover the bread with a silver warq(Chaandi vark). Cut it into desired shape(usually diamond shape) with a greased knife.
- Let it be cool completely and then transfer it to a container(air tight).
Homemade Kalakand Sweets
Ingredients for this Homemade Sweets Recipe
- 3/4 cup finely grated Paneer (cottage cheese)
- 8 tbsp Milk powder
- 1 tsp Cornflour
- 1/4 cup Sugar
- 1/2 cup fresh Cream
- 1/2 tsp Cardamom(Elaichi)powder
- Almonds(finely cut)
- Silver foil (For garnishing)
Method of Preparation for this Homemade Sweets Recipe
- Mix all the ingredients in a 175 mm(7”) dish(micro proof) and microwave it on high for 5 minutes.
- Now, spread the mixture evenly in the same dish using the backside of a spoon.
- Sprinkle a bit cardamom powder and almonds equally over the mixture, keep aside to cool down completely.
- Once the mixture is cooled, cut into even and equal pieces of desired shape(usually square)
- Refrigerate it for at least an hour. Now it is ready to be served.
Basundi
Ingredients for this Homemade Sweets Recipe
- 1 litre Milk(whole milk)
- 45grms Milk powder
- 15 strands Kesar(saffron)- soak in 2tsp hot water
- 1/4 cup Sugar
- 1/2 tsp Cardamom/elaichi powder
- 4-6 Cashew nuts (cut into small pieces)
- Almonds and Chironji- as per individual preference
Method of Preparation for this Homemade Sweets Recipe
- Boil milk on high power in a big shallow container for 20-25 minutes, stirring in-between after 10 minutes. Mix malai with spoon. Milk quantity shoul be reduced to half.
- Add sugar and continue simmering on 80% power level for 10 minutes.
- Add milk powder, cardamom powder, cashewnuts pieces, sliced almonds and chirinji and microwave on high for 2 minutes.
- Add kesar milk to basundi. Serve hot or cold.
Payasam
Ingredients for this Homemade Sweets Recipe
- 4 tbsp Basmati rice wash and soak it for 20 minutes in water.
- 1/2 cup Sugar
- 2cups Milk
- 4 Cardamom/Elaichi
- 10 Cashew nuts
- Few strands Kesar(Saffron)
- Almonds and Chironji as per preference
Method of Preparation for this Homemade Sweets Recipe
- Drain water and put the rice in food processor and use pulse button to break the rice grain.
- Add 150ml of water to the broken rice grains and microwave covered in a flat board dish for 6 minutes.
- Add milk and microwave uncovered for 6 minutes, stir in-between after 4 minutes. Make sure no lumps are formed.
- Add sugar, cardamom powder, nuts, kesar and mix well. microwave for 2 minutes.
- Allocate standing time for 10 minutes. Enjoy the dessert cold or warm.
Fruit & Nut Bite Homemade Sweets
Ingredients for this Homemade Sweets Recipe
- 150gm cooking Chocolate(chopped)
- 2-3 tbsp Almonds(chopped)
- 2 tbsp Walnuts(chopped)
- 3tbsp Raisins(Kishmish)
Method of Preparation for this Homemade Sweets Recipe
- Melt the chocolate in a micro proof bowl for 1minute. Stir the softened chocolate with a spatula and microwave it for 30 seconds more. Remove chocolate from oven. Stir till it melts nicely and comes to room temperature.
- Put almonds and walnuts in micro proof plate and microwave for 3minuts to roast it.
Stir nuts and raisins into chocolate .Keep aside for few minutes till it starts to become slightly thick. It should not be runny nor too thick. - With a spoon drop rough heaps of the chocolate mixture onto the plate lined with aluminum foil.
- Press nuts on top .Leave in the fridge to set before removing from the plate. Allow to set in the fridge for at least 1-2 hrs. Wrap in decorative paper. Serve.
